Hey vegan bunnies! Today we’re going to make raw vegan Almond Joys! If you love coconut, you’ll fall in love with these healthy candies. Packed with vitamins, minerals, and living enzymes these are going to make a great alternative to the original.
These raw vegan Almond Joys make great gifts! Try making a batch for Christmas or giving them to the kids at Halloween. But the best time to have them is… anytime! They go so quick in our house like all the chocolate goodies. You can also try my Raw Vegan Snickers with any leftover chocolate! Everything you need is listed below. Enjoy!
Raw Vegan Almond Joys
2 cups finely shredded coconut
2/3 cup coconut oil
1 tsp vanilla
4 small dates
Almonds (2 per bar)
Any melted chocolate you like. My recipe (HERE)
In a food processor add all coconut filling ingredients and process until combined.
Press the mixture into an 9×9 baking pan lined with parchment paper and freeze for 15-20 min.
Remove from the baking pan by pulling up the parchment paper and cut the filling into small rectangles.
Then place a cookie drying rack onto a cookie sheet. This helps save the chocolate that drips off. Place the coconut rectangles into the rack and place 2 almonds on top to resemble that Almond Joy look.
Spoon melted chocolate over the almonds and freeze for 10-15 min. The idea here is to secure the almonds to the coconut so we can dip them.
Now using a candy dipping scoop, dip the whole bar into a bowl of melted chocolate and place them back onto the cookie drying rack. And freeze again for 15-20 min. You can dip these as many times as you want.
Once solid you can flip the rack over a tap the bars to get them off. You may need to scrape off some of the chocolate that formed around the bars of the rack for them to come off easy.
Don’t forget to scrape the cookie sheet of all the extra chocolate that dripped off. You can melt in again and make more or crush and use as a topping on smoothie bowls or something similar!
Store these raw vegan almond joys in the refrigerator.
