Hey bunnies! Today we’re going to make raw vegan apricot macadamia nut bars. These chewy snack bars are sure to go quick! Made with dried fruits these are a nice sweet treat. Try pairing these with hot tea. Serve fresh and warm out of the dehydrator. It’s absolutely delicious. Or they make great grab and go snacks for car rides or to take to the movies. Raw vegan options are always slim there.
Since were using dried fruit you have two options on how to get it. You can purchase dehydrated fruit from the store or, if you are particular, you can also dry your own at 115 degrees in a dehydrator. Store these bars at room temperature. Raw Vegan Apricot Macadamia Nut Bars
1 cup dried apricots
1/4 cup golden raisins
6 large or 12 small pitted dates
1 cup macadamia nuts
1/2 cup shredded coconut
1/8 tsp Himilayan salt
1/4 tsp cinnamon
Soak the apricots, raisins, and dates for 3 hours. Reserve the soak water. You can use this in smoothies or drink by itself.
Add the softened fruit to a blender or food processor and blend in to a paste. You may need to scrap the sides a couple times. Transfer fruit blend to a large bowl.
Grind the macadamia nuts up into a medium-fine meal leaving just a few chunks.
Add the ground macadamia nuts, coconut, and Himalayan salt to the fruit blend and stir to combine.
Shape into bars using your hands and place on dehydrator screens.
Dehydrate at 115 degrees for 12 hours.
