Hey bunnies! Today we’re going to make raw vegan banana poppy seed granola bars. These bars work great as a last minute breakfast when your running late or as an after school snack. My weeks are getting increasingly busier with my second business so I don’t have as much time to make fancy meals during the week. And as much as I love my fruits and veggies, sometimes I want more than just a mango for a snack.

I  whipped these bars up super quick before the gym and then popped them in the freezer. Thats another great thing about this recipe, you don’t need a dehydrator. I also can’t remember the last time I had poppy seeds. When I came across these raw poppy seeds and the health food store I knew I had to make something with them. Raw Vegan Banana Poppy Seed Granola Bars


1 medium very ripe banana

2 cups raw oatmeal

1 cup raw almond butter

1/4 tsp raw coconut nectar

2 tbsp raw poppy seeds

1 tsp vanilla

1 tsp ground cinnamon


Place all ingredients into a food processor with the “s” blade attached and blend until its sticky and moldable.

Grease a 9in square pan with extra virgin coconut oil.

Push the dough evenly into the pan. I use a spatula and wet it with water from time to time to keep it from sticking to the spatula. Only use what you need to get the job done. Too much water will ruin the bars.

Freeze for 24 hours

Cut to desired size.

Store in the freezer.
