I’m always looking for ways to spice up a salad. So far as a raw vegan I find myself leaning toward salads for lunch. It just seems to make sense to me. I would eat grilled chicken salads for lunch on a healthy omnivore diet so its second nature to want a salad. But I know how BORING lettuce can get day after day. So for this broccoli carrot salad I left lettuce out of the recipe all together!
One thing I love about raw salads is they can stay in a backpack or on the desk until lunch time with no need for refrigeration and require no heating up. Perfect for any type of work situation. My favorite thing about this salad is the mega crunch you get from carrots and apples. Gives it a very crisp and refreshing sensation. Carrots have a high level of beta-carotene and this acts as an antioxidant to cell damage done to the body my metabolism. Broccoli is high in fiber, very high in vitamin C and has potassium, B6 and vitamin A. Everything you need is listed below. Enjoy!
Raw vegan broccoli carrot salad ingredients:
2 small crowns or broccoli cut into bite-sized pieces
1 tsp sea salt
1 tbsp olive oil
3 med carrots grated
1/2 med red onion chopped
1 med tomato chopped
1 apple cubed
juice from a med lemon
1/8 cup rasins
1/8 cup hemp seeds
1/8 cup sunflower seeds
1/8 cup goji berries
Add your broccoli, sea salt, and olive to a large mixing bowl and stir to combine well.
In another bowl, combine the lemon juice and your apples cubes and set aside.
Add all other ingredients, carrots, onion, tomato, raisins, sunflower seeds, hemp seeds, and goji berries to the bowl with the broccoli.
Add the apple lemon juice mixture to all other ingredients and toss to combine
Serve or store and enjoy! Serves 2
