I’ve been watching a lot of Iron Chef lately and they use so many different and creative ingredients to make dishes. So, it gave me the idea to use whatever I had already in the fridge or on the counter to create a salad for lunch with no plan in mind, in this case a raw vegan broccoli cauliflower salad with fat free dressing. ┬áJust something I could create quickly that was full of nutrition, color, and flavor.

I had some leftover broccoli and cauliflower that I needed to use up so I used that for the base of this broccoli cauliflower salad. I don’t normally eat a large bowl of raw broccoli and cauliflower so I made a large portion of sweet n’ spicy fat free salad dressing to pour over top and it all combined nicely. I also used some golden cherry tomatoes to give a contrasting color to the red pepper. This raw vegan broccoli cauliflower salad is quick and easy to make for lunch or dinner. Raw Vegan Broccoli Cauliflower Salad Ingredients (serves 1-2):
2 heaping cups broccoli, chopped
1 heaping cup cauliflower, chopped
1 1/2 heaping cups Golden cherry tomatoes, halved
1 red pepper, sliced
1/4 cup parsley, finely chopped

1 cup fresh orange juice
2 golden kiwis
1/4 tsp sea salt
1/2 small Serano pepper, seeded
10 small mint leaves
1/4 cup red cabbage, for pink color

Mix all salad ingredients together in a bowl and toss.
Combine all dressing ingredients in a blender and blend until smooth.
Pour over your salad and enjoy!
