Hey bunnies! Today we’re going to make some raw vegan chipotle corn chowder. I’ve been missing chunky creamy soup so bad lately. I’ve also been seeing yummy pictures of corn chowder on Instagram so I decided to revisit a corn chowder recipe I would make occasionally. The other recipe was a smooth soup and I decided to add in lots of fresh chopped veggies. The great part is the same veggies will be used to make the soup as well.
In addition to chunky, this chowder has a nice spicy kick to it. I like soups with a little spice to help warm the body a little like cooked soup would. There is only 1/4 tsp of chipotle in here but the flavor doesn’t hit the palette till the end. When I was working on the recipe I would take a little taste with my spoon and it wasn’t spicy at all. So I added another 1/4 tsp. and it still wasn’t spicy but I sat down and ate it as it was… Holy hot! My nose was running after eating serval spoon full haha. So if you like real spicy add more in slowly. Everything you need is listed below to make raw vegan corn chowder. Enjoy!
Raw Vegan Corn Chowder
4 cups corn, divide in half
1 red pepper chopped, divide in half
2 celery stalks chopped, divide in half
2 green onions chopped separate whites
1 cup chopped cauliflower
1 tsp Nama Shoyu
1/8 tsp smoked paprika
1/4 tsp chipotle
dash freshly cracked pepper
Add 1/2 each of the red pepper, celery, and corn to a blender. Also add in onion whites, cauliflower, Nama Shoyu, smoked paprika, chipotle, and cracked pepper. Blend until smooth.
In a large bowl add the other half of the red pepper, corn, and celery. Also add in the rest of the green onions.
Pour blended soup over top of the chopped veggies.
Stir to combine and serve. This makes about 3 servings around here.
