Raw Vegan Chocolate Chip Cookies
1 3/4 cup raw sprouted almond flour
1/3 cup coconut butter
1 tbsp coconut oil
3 tbsp coconut nectar or maple syrup
1/2 tsp vanilla extract or seeds from 1/2 vanilla bean
pinch Himalayan salt
1/3 cup raw cacao nibs
Combine all ingredients but the cacao nibs in a stand mixer. Beat on low-med speed until combined. The dough will be crumbly.
Stir in the cacao nibs.
Shape into rounds 2-3 in. in diameter and about 1/2 in thick.
Dehydrate at 115° for 12 hours flipping halfway if you like. If you want to put these in before bed is ok too. Just flip them when you wake up. That’s what I do!
