When I was growing up there was this cookbook called “cooking from A-to-Z”. The very first recipe I ever made was “P” for peanut butter cookies. They were so fun and easy to make. I made them all of the time. I remember how proud I was of myself after I made my very first recipe. My favorite part was putting the fork marks into the cookies before they went in the oven.
Since then not much has changed. Peanut butter cookies are still fun and easy to make but now there’s no processed sugars or artificial ingredients. Nor are they cooked destroying valuable enzymes and nutrients. It’s a win-win. These are great to make for parties, holidays, or for an after school or work snack. Everything is listed below to make these raw vegan peanut butter cookies. Enjoy!
Raw Vegan Peanut Butter Cookies Ingredients:
3/4 cup raw almonds
1/4 cup oat groat flour (made from putting raw oat groats in a blender)
1/2 cup raw peanut butter
1 1/4 cup pitted dates
1 tsp vanilla extract
pinch of sea salt
Pulse the almonds in a food processor until they form a flour.
Then add in the rest of the ingredients and processes until a crumby but sticky dough forms. Don’t worry, the dough will be crumbly.
Take the dough and roll it into small balls and place on a cookie sheet.
Using your hand, flatten the balls out a bit. If you want, you can use a fork to make the traditional peanut butter cookie look.
Chill in the fridge for a least 2 hours. Enjoy!
