Raw Vegan Polenta
2 1/2 cups fresh corn divided (1 1/2 cup & 1 cup)
1/4 cup pine nuts
1/4 cup cashews soaked overnight
1 tsp onion powder
1/3 small jalapeno
2 minced garlic cloves
1/2 tsp Himalayan salt
pinch of pepper
2 tbsp cilantro
In a blender add 1 1/2 cups corn, pine nuts, cashews, onion powder, jalapenos, garlic cloves, salt, pepper, and cayenne. Blend until the texture is like cooked cornmeal. There will be small chunks throughout.
Then stir in remaining corn and cilantro.
Optional: You can dehydrate at 115° for 1-2 hours to get a crust on top! I personally love this step.
