Hey bunnies! Today we’re going to make some raw vegan salsa. Nothing beats fresh salsa. I was always disappointed when getting salsa in a jar. It was runny,  tasted plain, and full of preservatives. Raw salsa contains more vitamins and minerals and also contains living enzymes.

One thing I love about raw vegan salsa is that you can add it to so many other dishes. You can use it on tacos, as a dip for chips, or even to spice up a salad. I love to make tacos using the salsa and then the following day make taco salad and use it again. This will create enough to fill 2 collard wrapped tacos and 2 salads. Raw Vegan Salsa


2 cups chopped tomatoes

1 cup fresh cilantro chopped

1/2  a small red onion chopped

2 tbsp fresh lemon juice

2 garlic cloves minced

1/4 tsp cayenne pepper

3/4 tsp sea salt

1 1/2 tsp ground cumin

3/4 tsp ground coriander


Combine all salsa ingredients in a large bowl and toss to combine.
