Hey, bunnies! Today we’re going to make raw vegan strawberry coconut crackers. I love having little munchie items around the house. They always come to the rescue when you’re starving and need something quick.
The unique thing about these raw vegan strawberry coconut crackers is the flavor. Most of the time crackers are hearty and/or salty and these crackers are more sweet and creamy in my opinion. Almost like a dessert cracker. They are great for a quick snack and they travel well. Everything you need is listed below. Enjoy!
Raw Vegan Strawberry Coconut Crackers
2 cups strawberries with tops
1 cup unsweetened shredded coconut
1 cup raw coconut milk
3 tbsp lemon juice
1/2 tsp vanilla extract
2 tbsp coconut nectar
Put all the ingredients into a high-speed blender and blend until smooth.
Pour the mixture onto a dehydrator tray lined with a non-stick sheet.
Slap the tray down a couple times to help level it. Then use a spatula to spread it into a square. Make sure to take it as close to the edge of the sheet as possible.
Dehydrate at 115° for 12-24 hours. Th mixture is a bit thick so it might take a little longer than normal.
Use a pizza slicer to cut the sheet into bite sized crackers.
