The quinoa gives the salad a nice crunchy texture while the strawberries add a refreshing touch. Arugula adds in a bold peppery flavor, while a smoothness comes from the fresh coconut. This is great for an at home lunch or packed lunch. I sent my fiancé off to work with this strawberry quinoa salad and he loved it on his lunch break!
Quinoa is gluten-free and full of vitamins and minerals. B vitamins, magnesium, phosphorus, potassium, calcium, and vitamin D just to name a few. It is also a complete protein. This raw vegan strawberry quinoa salad won’t leave you hungry either. It has a great balance of protein, fat, and carbs. Raw vegan strawberry quinoa salad ingredients (serves 2):
1 avocado, cubed
2 cups of strawberries, quartered
1 cup quinoa, sprouted and soaked overnight- HERE
¼ cup chopped raw pecans
Flesh from 1 young Thai coconut, chopped
1 cup arugula
2 tbsp fresh lime juice
3 tbsp olive oil
2 tsp pure maple syrup
1 tsp whole grain Dijon mustard- HERE
pinch salt and pepper
Add all your salad ingredients to a bowl and toss together and divide on two plates.
Add all the dressing ingredients to a jar and hake to combine.
Pour dressing over the salads.
