Hey bunnies! Today we’re going to make a raw vegan tuna salad. I grew up eating traditional tuna salad that my mom would make for me in cucumber boats. I loved these when I was a kid so I’m happy to re-create them with my new lifestyle.
If you use a cucumber boat peeling it will make biting into it easier. I like to leave the skin on for the extra nutrients but things can get a little messy. You can also use this on crackers or with other veggies like a salad. Everything you need is listed below. Enjoy!
Raw Vegan Tuna Salad Recipe
1 cup raw sunflower seeds soaked overnight- HERE
2 celery stalks chopped
1/4 cup yellow onion
2 tbsp dulse – HERE
1 1/2 tbsp dill
3/4 cup raw cashews soaked overnight
1/ 2 cup thai coconut water
1/2 cup lemon juice
1/8 cup raw mustard or whole grain dijon mustard
2 cloves of garlic
1/8 tsp cayenne pepper
1/2 tbsp salt
pinch black pepper
Mix all “Meat” ingredients in a large bowl and set aside.
Mix all “Mayo” ingredients in a nutri bullet or blender
Then slowly add in as much or little mayo as you like to the sunflower seed mixture. Stir to combine.
I like to have mine in cucumber boats but feel free to use this whatever way you like. Enjoy!
